Beef Street Tacos

These were such a hit with our kiddos. I had them on the rack taking pictures and many of them didn’t even make it to the dinner table before they were gobbled up. We made some chicken ones as well, that recipe will be coming soon. So delicious, easy, healthy and kid friendly. Doesn’t get much better than that.

Beef Street Tacos

Ingredients:

1 lbs ground beef

1/2 white onion (divided)

1 green bell pepper, diced

1 clove garlic, minced

1 tsp ground cumin

1/4 tsp salt (more to taste)

1/4 tsp pepper

1/4 cup queso fresco, crumbled

1/4 cup cilantro

1 lime, quartered

1 cup romaine lettuce, shredded

4 TBSP olive oil (divided)

Directions:

Start out with the green bell pepper, and 1/4 cup white onion in a frying pan with 1 TBSP olive oil. Saute until the peppers and onions begin to soften. Add in garlic, ground beef, cumin, salt and pepper. Cook until beef is cooked without any pink. Set aside and start frying up your tortillas. (Put a little bit of olive oil in a pan, throw in your tortillas and cook for 30 seconds on each side.)

To serve, put beef in corn tortillas, squirt with a bit of lime, top with lettuce, diced fresh onion, cilantro and queso fresco. Enjoy!!
