Coconut Caramel Syrup

We have loved this so much this weekend with our family in town for graduation and Memorial day. It was amazing on french toast. It would also be super tasty on waffles, our whole wheat oatmeal pancakes, german pancake muffins, or even on top of our mango coconut oatmeal.

Coconut Caramel Syrup


1 1/2 cups sugar

3/4 cup buttermilk

1/2 cup butter

3 TBSP corn syrup

1 tsp baking soda

1/2 tsp coconut extract

1/2 tsp vanilla


Combine sugar, buttermilk, butter, corn syrup and baking soda in a medium to large pot. Bring to a boil on medium high heat, stirring constantly and cook for 8-10 minutes. It will be super bubbly. Cook until it’s a gorgeous golden brown, about 8 minutes. Remove from heat, stir in coconut and vanilla extract.
