Triple Decker French Toast with Chocolate & Strawberries

Don’t you think these would be fun for a Valentine’s day breakfast?? I love the red of the strawberries, the dark brown of the chocolate and the white whipped cream together. My toddler gobbled up a full stack of these so quick. That was proof this is a big winner with the kids.

Triple Decker French Toast with Chocolate & Strawberries

Ingredients:

FOR THE FRENCH TOAST:

1 loaf of Texas Toast (thick sliced white bread)

6 eggs

2 cups milk

1 tsp sugar

1/2 tsp salt

1/8 tsp pepper

1/2 tsp vanilla

FOR THE toppings:

1 small package of chocolate instant pudding (mixed up using directions on the box)

2 cups of whipped cream (*we like to make our own)

1 lb of fresh strawberries

*to make homemade whipped cream: grab 1 1/2 cups of heavy cream, 1 TBSP of sugar and 1/2 tsp vanilla. Whip together until you have stiff peaks.

Directions:

We’ll start with the french toast. Beat together the eggs, milk, sugar, salt, pepper and vanilla. Turn on your skillet (or you can do it in a frying pan) to 350F degrees - or medium high heat. I give my skillet a quick cover with cooking spray. Then you grab a slice of texas toast, dip it in the egg mixture and lay it on the pan. Do this with your whole loaf. When the bread is golden on the bottom, flip it to the other side. When that side is also golden, take it off the heat. While the french toast is sizzling, I get started on the toppings.

Take one cup of the whipped cream and 3/4 cup of the chocolate pudding and gently whisk together. Slice up the strawberries to be ready when your french toast is done cooking.

Now that everything is cooked and whipped together, we’re going to start assembling. Take 3 slices of french toast (I did this with halves), spread a layer of chocolate pudding on top of the first slice. Put another slice on top of the pudding. Now grab your whipped cream/pudding blend and spread that on top of the 2nd slice. Take on more slice an put it on top of the mixture. Top with whipped cream and sliced strawberries.
