Mango Coconut Oatmeal

I love this oatmeal because it takes me back to when my husband and I went on a trip to Cancun, Mexico for a getaway with out the kids. It was one of the best times I’ve ever had, in one of my very favorite places in the world. The flavors of this oatmeal bring me back to watching the waves on the beach while eating delicious tropical fruit. These memories couldn’t be more welcome than when we are freezing in 20 degree weather, dying for spring to arrive.

Mango Coconut Oatmeal

1/2 cup steel cut oats, cooked*

1/2 banana, sliced

1 mango, diced

1/3 cup milk

1 TBSP shredded coconut

4 candied pecan halves (for our recipe, click here)

dash of cinnamon

I used to make this with regular quick oatmeal, but now that I have discovered steel cut oats, they are by far my favorite!
