Honey Citrus Chicken Thighs

I have a new found love for cooking with boneless, skinless chicken thighs. They are so much moister than chicken breasts. I especially like them a lot better as leftovers, not nearly as dry.

This recipe is easy peasy. Here we go!

Honey Citrus Chicken Thighs

8 chicken thighs, boneless, skinless (sliced in half for shorter cooking time, if desired)

olive oil

kosher salt

pepper

3 fresh sprigs of rosemary

2-3 garlic cloves, chopped

1/2 lemon, sliced

1/2 orange, sliced

ground mustard

1/4 cup honey

Drizzle some olive oil into a skillet with the garlic and rosemary. Heat up to medium high and add the chicken. Sprinkle with kosher salt, ground pepper and ground mustard. Brown on one side, then flip and season on the other side.

Place in a greased glass pan. Place chicken, rosemary and garlic in the pan. Top with lemon and orange slices. Drizzle with half of the honey. Bake at 375 F degrees for 10-15 until internal temp reaches at least 165 F degrees. Take out of the oven and drizzle remaining honey.

This is really tasty served with apple berry salad, mashed potatoes and fresh dinner rolls.
