Coconut Banana Bread with Chocolate Chips - Seven Brothers Copy Cat Recipe
What if I told you one bite of banana bread could take you straight to a breezy Hawaiian evening with family, laughter, and the smell of something amazing fresh from the oven?
It has been one of my mother in law’s big dreams in life to go to Hawaii. Several weeks ago my husband and I had the incredible opportunity to be part of making that happen. We gathered in paradise with his 6 siblings and their spouses on Oahu. Dreamy!
One night while we were there, my darling sister in law brought over the most delicious Coconut Banana Bread with Chocolate Chips. She had stopped by the Seven Brothers Bakery on her way back to the condo, and blessed us with a loaf! It was melt in your mouth amazing!
When I got home, I was dying to share this deliciousness with my kids, so I got to work in the kitchen to recreate the recipe. After some trial and error, we accomplished our mission! So today, I bring to you our copy cat version of Seven Bros Coconut Banana Bread with Chocolate Chips!!
When you make this, your house with smell amazing and you can imagine you are on sunny beaches with a breeze blowing through the palm trees!

Coconut Banana Bread with Chocolate Chips
Ingredients:
3 bananas
2 eggs
1/2 cup sugar
1/2 cup butter, softened
1/2 cup whole milk
1 tsp lemon juice
1 tsp baking soda
1 tsp salt
1 tsp vanilla
2 1/2 cups flour
6 TBSP coconut, shredded & sweetened (divided)
1 cup chocolate chips (divided)
Glaze (recipe below)
DIRECTIONS:
Mix together 3 bananas (brown make the bread sweeter!), 2 eggs, 1/2 cup sugar, 1/2 cup softened butter, 1/2 cup whole milk, 1 tsp lemon juice, 1 tsp baking soda, 1 tsp salt, and 1 tsp vanilla.
Add 2 1/2 cups flour, mix. Then add 3 TBSP shredded sweetened coconut, shredded & sweetened, 3/4 cup chocolate chips. Stir together.
Preheat oven to 350 F degrees. Pour batter into 2 greased loaf pans.
Top loaves with 3 TBSP coconut and 1/4 cup chocolate chips.
Bake for 45-55 minutes. Loaves are done baking when you insert tooth pick or cake tester and batter comes out clean and dry.
Immediately after taking loaves out of the oven, loosen edges with a knife and dump out of pans to cool.
Cool for at least 10 minutes, and then drizzle with glaze.
Glaze:
1 1/2 cups powdered sugar
2 TBSP water
1 TBSP butter, softened
1/2 tsp vanilla
Mix ingredients together.
