Auntie Dee's Macaroni Salad- A Hawaiian Classic!

This classic creamy macaroni salad recipe was inspired by my sweet Auntie Dee. She always had a big bowl of homemade macaroni salad in her fridge whenever we came to visit. It was her signature dish! Simple, comforting, and always a crowd pleasing side for family dinners. It’s one we love to bring to summer BBQs, potlucks, and put in our kids’ school lunches.

It wasn’t until we were in Hawaii last week (where traditional Hawaiian macaroni salad is served with nearly every meal) that I realized I hadn’t shared my aunt’s version here on the blog. One bite instantly took me back to Auntie Dee’s kitchen, being fussed over and loved on.

Why this macaroni salad is nostalgic for our family:

Auntie Dee’s Macaroni Salad

Ingredients:

16 oz elbow or short macaroni, cooked al dente

1 1/2 cups mayonnaise

1/2 cup celery, finely chopped

1/2 cup pimentos (4 oz jar)

1/4 cup red onion, finely chopped

1/4 cup sweet pickle relish

1/4 tsp salt

1/4 tsp pepper

2 eggs, hard boiled, chopped (optional)



DIRECTIONS:

Mix everything together. It’s best if it has time to chill 30 mins to an hour before to let the flavors blend.

You can make this in 20 minutes!!!
