I had a girls night for the women at my church at my house the other night and used them as my recipe testers. This was the clear winner! I decided it needed to be special, so I reserved it to debut in our newsletter. This Lemon Berry Cookie Pizza has a lovely lemon flavored snickerdoodle crust, smooth and silky cream cheese frosting topped with delicious, fresh berries. It’s the perfect summer dessert!!

    Lemon Berry Cookie Pizza

    Ingredients for the crust:

    1 1/2 cups sugar
    1/2 cup margarine or butter (softened)
    1/2 cup shortening
    2 eggs

    1 TBSP lemon juice

    2 1/4 cups flour
    2 teaspoons cream of tartar
    1 teaspoon baking soda
    1/4 teaspoon salt

    1 cup white chocolate chips

    Directions for Crust:

    Heat oven to 350 degrees. Mix 1 1/2 cups sugar, margarine or butter, shortening, lemon juice and eggs. Next, mix in flour, cream of tartar, baking soda and salt. Lastly, stir in white chocolate chips.

    Grab your jelly roll pan (cookie sheet with edges), or large pizza pan, and press the dough into the pan. Bake at 350 F degrees for about 10-12 minutes.

    Once you let it cool a bit, add the cream cheese frosting (below) and top with fresh berries. So delicious!! If you are making it ahead, refrigerate it.

    ingredients for cream cheese frosting:

    2 1/2 cups powdered sugar

    1/3 cup cream cheese, softened

    1/4 cup butter, softened

    2 TBSP milk

    1/2 tsp vanilla

    1/2 tsp lemon zest

    Directions for Cream Cheese Frosting:

    Cream together all the ingredients until smooth.
