Lemon Berry Cookie Pizza

I had a girls night for the women at my church at my house the other night and used them as my recipe testers. This was the clear winner! I decided it needed to be special, so I reserved it to debut in our newsletter. This Lemon Berry Cookie Pizza has a lovely lemon flavored snickerdoodle crust, smooth and silky cream cheese frosting topped with delicious, fresh berries. It’s the perfect summer dessert!!

Lemon Berry Cookie Pizza

Ingredients for the crust:

1 1/2 cups sugar
1/2 cup margarine or butter (softened)
1/2 cup shortening
2 eggs

1 TBSP lemon juice

2 1/4 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt

1/2 cup sugar, divided

1 TBSP powdered sugar
2 teaspoons lemon zest

Directions for Crust:

Heat oven to 350 degrees. Mix 1 1/2 cups sugar, margarine or butter, shortening, lemon juice and eggs. Next, stir in flour, cream of tartar, baking soda and salt.

In a separate bowl, combine 1/4 cup sugar and powdered sugar with the lemon zest. Grab your jelly roll pan (cookie sheet with edges), or large pizza pan, and sprinkle 1/4 cup sugar over the entire pan.

Press the dough into the pan, and then sprinkle the sugar/lemon zest mixture on top. Press into the dough on top just a little bit. Bake at 350 F degrees for about 10-12 minutes.

Once you let it cool a bit, add the cream cheese frosting (below) and top with fresh berries. So delicious!! If you are making it ahead, refrigerate it.

ingredients for cream cheese frosting:

2 1/2 cups powdered sugar

1/3 cup cream cheese, softened

1/4 cup butter, softened

2 TBSP milk

1/2 tsp vanilla

Directions for Cream Cheese Frosting:

Cream together all the ingredients until smooth.
