Pumpkin Chocolate Chip Muffins with Streusel Topping- Great On the Go Breakfast for Kids!
If mornings look anything like mine, you spend half of it trying to pry your kids out of bed and the other half rushing around full speed to get out the door on time. These Pumpkin Chocolate Chip Muffins with Streusel Topping were made for the morning madness. They’re hearty enough to actually fill kids up, sweet enough that no one complains, and easy to grab when everyone’s running late (again). They’re even great for popping in your kid’s lunch box. I love having a batch ready on the counter or in the freezer. It’s one less thing to think about on busy fall mornings.

Pumpkin Chocolate Chip Muffins with Streusel Topping
Ingredients:
2 cups flour
1 cup white sugar
2½ teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
¾ teaspoon salt
½ teaspoon allspice
¼ teaspoon nutmeg
⅛ tsp cloves
½ cup butter, melted
2 eggs
½ cup sour cream or plain Greek yogurt
½ cup milk
1 tsp lemon juice
15 oz. pureed pumpkin (I use canned)
1 cup chocolate chips
streusel topping (recipe below)
Directions:
Whisk together dry ingredients: 2 cups flour, 2 ½ tsp baking powder, 1 tsp baking soda, 2 tsp cinnamon, ¾ tsp salt, ½ tsp allspice, ¼ tsp nutmeg, ⅛ tsp cloves.
Add wet ingredients: ½ cup milk, 1 tsp lemon juice, ½ cup sour cream, 2 eggs, 15 oz pumpkin, 2 eggs. Mix together until mostly smooth. Add 1 cup chocolate chips and stir again.
Preheat oven to 350°F. Line muffin tins with paper liners or spray with cooking spray. Set aside. In a separate bowl, mix together streusel topping (recipe below).
Now that your batter is mixed, and your streusel topping is ready, we’re going to scoop the batter into muffin tins (a little over halfway in your muffin cups).
Once muffin tins are filled, top with 2 TBSP streusel topping in each muffin cup. Put in your oven.
Bake muffins at 350 F for about 20 minutes give or take a couple minutes. You’ll know when the muffins are done when you insert a toothpick and it comes out clean.
If you are using paper liners, pull muffins out to cool on a rack. If you greased your pans, loosen around the edges with a knife and let cool a couple minutes before putting them onto racks.

Streusel Topping
Ingredients:
½ cup brown sugar
½ cup white sugar
1 cup flour
½ teaspoon cinnamon
¼ teaspoon salt
½ cup butter, melted
Stir together with a spoon or fork.
