Tropical Oatmeal

When we vacationed in Guanacaste, Costa Rica, I had cinnamon oatmeal with these tropical flavors every morning for breakfast. The tangy fresh pineapple combined with the creaminess of the milk and oatmeal with just a touch of spice from the cinnamon, makes my palate so happy!!

The Tico version had a lot more milk added to their oatmeal, but everything else is the same. Every time I eat this it brings me back to the Pura Vida in Playa Matapalo!!

Tropical Oatmeal

Ingredients:

2/3 cup cooked oatmeal

1 tsp brown sugar

1/2 tsp vanilla

1/4 tsp cinnamon

dash of salt


Toppings:

1/3 cup pineapple, sliced

1/3 cup bananas, sliced

2 TBSP almonds or macadamia nuts

1 TBSP coconut flakes

1/2 cup milk of your choice

Directions:

Combine ingredients. Cover with toppings. Enjoy!!!
