Avocado Toast - The Best Breakfast in Bed for Mama!!

With Mother’s Day coming up this week, it’s the perfect time to talk about breakfast in bed!! This Avocado Toast is an easy recipe that is really tough to mess up, but it is oh so delicious!! There is something about the crispy bread, creamy avocado and rich egg that makes this a very wonderful way to start the day!

Avocado Toast

ingredients:

grainy bread or our homemade white bread

avocado, mashed

eggs- fried, scrambled or poached

tomato

everything but the bagel seasoning

salt & pepper

hot sauce such as tabasco or cholula (optoinal)

butter (optional)

balsamic vinegar (optional)

directions:

Toast bread. If you are doing a large batch, lay your bread on a baking sheet and toast in the oven! Once it is out, brush with butter. Top your bread with tomato, mashed avocado and egg. Sprinkle with Everything But the Bagel Seasoning. Drizzle with balsamic vinegar or hot sauce if desired.

Give it an international flare by changing up your toppings. Here are some ideas:

Hold the everything but the bagel seasoning, sprinkle with salt and do this instead:

  • Mexican: Add pickled onions, salsa & queso fresco

  • Italian: Add fresh mozzarella or burrata cheese, basil and drizzle with olive oil & balsamic vinegar

  • Southern: Add fried onions & hot sauce

  • Middle Eastern: drizzle with our white dill sauce and a bit of harissa

  • Brazilian: replace the tomato with fresh mango, give it a squeeze of lime and sprinkle with sugar

  • British: Add sausage and drizzle with malt vinegar

  • French: Add swiss cheese when you toast the bread, a slice of ham and sprinkle with herbs de provence

  • Japanese: Add cucumbers, crispy seaweed, crab, pickled ginger and a smear of wasabi. drizzle with soy sauce.
